Zucchini and Summer Squash in our garden
are growing faster than we can pick them
so it's time to break out
my mother-in-law's 'Zucchini Bread' recipe!
1 c. oil
2 c. sugar
1 tsp. vanilla
Add & beat in:
3+1/2 c. flour
1+1/2 tsp. baking soda
1+1/2 tsp. salt
3/4 tsp. baking powder
1 tsp. cinnamon
2 c. grated summer squash
1 c. nuts (I used black walnuts)
Pour batter into 2 greased & floured metal loaf/bread pans
Bake in an oven preheated to 350*F
for 55-65 minutes until done.
(I use glass loaf/bread pans and 335*F for 65 min.)
Remove from oven and let cool in loaf/bread pan
for 10 minutes before dumping loaf
onto a cooling rack.
