1-31-2013 Minestrone

Ahh, gotta love winter storms in Iowa!
DH requested I make us some vegetarian soup for tonight
so I made this "Hearty Meatless Minestrone"
and it is delish!!!

(This "Hearty Meatless Minestrone" recipe is my adaptation of a recipe in the taste of home heartwarming soups magazine):

1 large onion, chopped
3 TB. olive oil
2 celery ribs, chopped
2 carrots, chopped
1 c. cabbage, chopped
1 green pepper, chopped
2 zucchini, chopped
6 cloves garlic, peeled and chopped
3+1/2 c. water
2 cans (14.5 oz. each) diced tomatoes, undrained
1 can (15 oz. garbanzo beans, rinsed & drained
1 can (14 oz.) tomato puree
1 can (8 oz.) tomato sauce
3 TB. dried parsley flakes
2 tsp. dried basil
2 tsp. dired oregano
1 tsp. sea salt
1/2 tsp. black pepper
1/4 tsp. cayenne pepper
1/2 c. small pasta shells
*fresh basil leaves
*parmesan cheese

In a large pot on stove, saute onion in oil for 2 min. Add the celery, carrots, cabbage, green pepper, zucchini, garlic and saute 3 more minutes. Stir in water, tomatoes, beans, tomatoe puree & sauce, and seasonings. Bring to a boil, reduce heat, cover and simmer 15 minutes. Stir in small pasta shells. Cook 15 minutes longer or until tender.  (*optional) Garnish each serving with fresh basil leaf and Parmesan cheese if desired. Makes 8 servings/3 quarts.
